Kingfish are a great source of nutrition. They provide
vitamins ad minerals such as A, B, niacin, calcium and phosphorus. They
are very high in protein and low in calories. The are also low in sodium
and have few bones which makes eating a pleasure. They are best prepared
by boiling, baking, or smoking.
KING MACKEREL STEAKS, BROILED WITH TANGY GLAZE
Yield: 6 servings.
2 pounds Florida king mackerel steaks*
1/3 cup vegetable oil
1/3 cup ketchup
1/3 cup frozen lemonade concentrate, thawed
1 tablespoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon garlic salt
1 large bay leaf, crumbled
Place fish steaks in a single layer in a baking dish.
Combine remaining ingredients; mix well.
Reserve 1/8 cup of marinade for basting; set aside.
Pour remaining marinade over steaks; turn to coat evenly.
Cover and marinate in refrigerator for 30 minutes.
Remove steaks from marinade. Discard marinade.
Place steaks on a lightly-oiled broiler pan.
Baste with reserved marinade.
Broil about 4 inches from source of heat for 5 to 6 minutes.
Turn carefully and baste with marinade.
Broil 5 to 6 additional minutes or until fish flakes easily when tested.
